Ricotta Pie

How about a quick and easy Cheesecake that's light, fluffy, low
in calories and yummy...

1 GF Pie Crust
1 tsp. Vanilla
1 tsp. Lemon juice
1/3 cup sugar, honey or your favorite sweetener
2 eggs, beaten
1 lb. Ricotta cheese (part skim)

Beat all ingredients together and pour into pie crust.
Bake at 350 for 1 hour.
