Brazilian Cheese Muffins

To a blender...
add 1 egg
1 cup milk
1/2 c vegetable oil
some hard shredded cheese
add 1/4 tsp baking powder
2 pinches of salt
blend and while bender is going...
add 1 1/2 cups tapioca flour through the top a little at a time.
Pour into prepared mini muffin tins
Bake 15-20 minutes at 385F.
Makes 24 mini muffins.
