Pomegranate Power Salad - made with organic tangerines, kiwi, pears,
pomegranate on a bed of cos (butter lettuce), dill, parsley, mint &
dressed with a pomegranate molasses vinaigrette.
Pomegranate Molasses Vinaigrette:
1/2 tbs of lemon juice
3 tbs pomegranate molasses (or other sweetener of choice)
Juice & seeds from 1 pomegranate
1/2-1 tbsp raw apple cider vinegar
Whisk all the ingredients together in a bowl, or put them in a jam jar
and give it a good shake. Will keep in the fridge for up to 5 days.
