Mediterranean Salad

"Cup for cup, red bell peppers are a better source of
vitamin C than orange juice and also are rich sources
of antioxidant phytochemicals that protect tissues from
premature aging and disease.

1 English cucumber, peeled and chopped
1 cup chopped tomatoes
1/2 cup seeded and chopped red bell pepper
1/4 cup peeled and chopped red onion
2 tablespoons chopped olives
2 tablespoons chopped fresh cilantro
1 tablespoon chopped fresh dill
1 teaspoon capers, rinsed and drained (optional)
1 tablespoon fresh lemon juice
1 teaspoon olive oil
1 teaspoon water
2 ounces fat-free feta cheese, crumbled
Sea salt to taste

Combine ingredients in a medium bowl. Stir well to mix. Cover
and chill until ready to serve. Makes 4 servings."
